The process of kitchen handover:
1. Check the cleanliness: The chef on the new shift will first check the cleanliness of the kitchen and confirm that all equipment and surfaces have been cleaned or disinfected , and recorded in the handover schedule.
2. Check inventory: Check the current inventory of ingredients, record remaining quantities and replenish necessities to ensure that there are enough ingredients to prepare food for the next shift.
3. Confirm orders: Check unprocessed orders, transfer them to the replacement staff, and confirm with the staff of the previous shift whether there are any problems or special requirements.
4. Check equipment: Check whether stoves, ovens and other kitchen equipment are operating normally. If there are any problems, please notify maintenance personnel immediately for repairs.
5. Signature confirmation: Carry out shift handover confirmation signature to ensure that all relevant personnel understand the status of the kitchen and subsequent work requirements.
