It can be said that instant noodles and dried noodles are very popular in the north. In the past, the academic circles always thought that the "dried noodles" recorded in Eating in the Yuan Dynasty was the earliest record of dried noodles in China. New research shows that China people have been eating this kind of "fast food" since the Tang Dynasty. Making process of handmade noodles
Handmade vermicelli usually starts at 2 pm every day and sleeps until around 3 am. The whole hand-made process takes about 20 hours, and it needs to go through 13 procedures, such as mixing noodles, kneading noodles, waking up noodles, rolling noodles, putting chopsticks, opening noodles, putting them on shelves, drying noodles, cutting noodles and tying noodles. Perhaps only people who make dried noodles can understand the hardships.
