Let's start with French wine grades. There are four grades of French wine. Look at the picture below. In fact, most of the wines imported from China are AOC. There is no way. China people only recognize AOC, and some wine merchants sell ordinary VDT and VDP for hundreds of dollars.
AOC is called legal producing area, VDQS is excellent regional table wine, VDP is regional table wine, and VDT is daily table wine.
Introduction to AOC:
AOC is the abbreviation of country of origin. The wine label shows the full name grade+country of origin+controlled person. It is important to look at the middle origin.
France has a large producing area of 10. The biggest concept of AOC is A+ large producing area +C, which is the biggest AOC scope concept. AOC tells us which producing area wine comes from. These major producing areas have their own basic characteristics, such as sparkling wine of champagne, dry white of Alsace, black Pi Nuo red of Burgundy and Chardonnay white. Therefore, regional AOC can only be transparent to us with some basic information, that is, the range of producing areas, the types of wines that can be produced in this producing area and the varieties of grapes that can be used.
List:
Take Bordeaux producing area (the most recognized by China people in French 10 producing area) as an example, and look at the map of Bordeaux first.
1, AOC in large producing areas:
If it is appellation+big producing area +Controlee, it is big wine, and the grapes come from the whole region (see the picture below for the wine label).
(See the red horizontal line in the picture) Bordeaux AOC, grapes come from the whole picture, and AOC is the widest division. This is a regional AOC.
2. AOC of secondary producing areas:
But what if it is title+secondary producing area+controlled person? Then grapes can only come from this smaller producing area, and the scope is narrower.
(See the red horizontal line in the figure) From A+ to Medoc +C, the producing area is determined as Haut Medoc in the above figure, which is more detailed than A+ Bordeaux +C, and we call it AOC as the secondary producing area. (Secondly, it is not inferior, but the meaning of area and size, the meaning of division)
3. Village AOC:
There is a more accurate title+village+controlled, indicating that grapes come from a village. Compared with A+ Medoc +C, the scope is finer.
(See the red horizontal line in the picture) A+ Pauillac +C, the grapes come from the village of Pauillac in the green spot above, which is a village-level AOC.
The highest one, such as Burgundy's title+garden name +Controlee, shows that grapes only come from one vineyard. This marks the origin of the grapes (Burgundy) very carefully.
But remember, the finer the place of origin, the better the quality, but not all wines will be good. We also need to look at the potential of the production areas. For example, some villages produce famous wines, which are much more expensive than those produced in other unknown villages. There are also some places to classify wineries. For example, in Bordeaux, there are many classifications. 1855 classification wine on the left bank (Haut Medoc) is divided into five grades. Graded wines are basically Bordeaux's highest title+village name +Controlee, but 1 grade wines are several times more expensive than grade 5 wines.
So remember, you can't blindly pursue AOC and its hierarchical effect. AOC just revealed the information of this bottle of wine to us, so that we can better understand this bottle of wine. We should know that there are:
Regional AOC
AOC in secondary production area
Rural AOC
Vineyard AOC
The same level of AOC, for example, two bottles of wine are called +Pauillac+Controlee, so the price is also very different. Lafite is called +Pauillac+Controlee (1 winery, 1855 classification divides local good wine into five grades), the most expensive is tens of thousands of yuan, while those ordinary ones are called+.
So, what does AOC tell us?
First of all, AOC, like us, revealed the origin first. In France, we can also know the origin according to the bottle type, and since AOC revealed the origin, it basically told us what to use. Every producing area in France has corresponding varieties. A bottle of AOC in Bordeaux will never be brewed with Shiraz. He will brew it with legal bordeaux varieties.
Besides varieties, AOC also tells us how to brew. For example, champagne is sparkling wine, Burgundy is brewed by a single variety, and Bordeaux likes to brew by multiple varieties.
The following is a list of varieties from various producing areas. If AOC comes from the following producing areas, for example, the title +Pauillac+Controlee is red wine and comes from Bordeaux, then it will be brewed with the following red grapes. The specific ingredient is generally Cabernet Sauvignon, Merlot is the main ingredient, and the rest is used for blending.
