Suining vermicelli, also known as "Shaji vermicelli" and "Zhangjia vermicelli", is an authentic farm dish. According to legend, Suining Shuifenpi originated in the Song Dynasty. Huizong was hungry and thirsty, but there was neither a restaurant nor a teahouse, so he asked his entourage to go to a nearby family to find a meal to satisfy their hunger. After eating, Emperor Hui Zong felt sour and soft, moderately salty, cool and delicious, and very comfortable. He even said, "Good food, good food!" Ask what? The hostess replied, "It's gouache skin." Hui Zong was overjoyed, so he decided to make gouache skin a regular dish for the chef. The Zhang family, who has been living in Shaji Town in the east of Suining today, has always retained the Zhang family vermicelli craft passed down from generation to generation.
The traditional production technology of Suining vermicelli is ancient and has local characteristics in northern Jiangsu. From the initial mung bean processing to the finished vermicelli, it takes six processes. That is, selecting beans → soaking → pulping → precipitation → paste mixing → spinning, etc. This traditional gouache has the characteristics of clean and clear posture, soft and smooth texture and refreshing taste, which makes people never tire of eating. There are many ways to eat Suining Shuifenpi, especially cold salad. If the seasoning is mainly pepper, it is called hot skin, and if the seasoning is mainly vinegar, it is called cold skin. In winter, gouache skin can also be fried and eaten, or made into various soups, which are equally delicious.
Zhang Haifeng, a descendant of the traditional vermicelli family in Shaji Town, Suining, has made a series of vermicelli products, such as vermicelli cakes, vermicelli pills, dried vermicelli and fresh vermicelli, all of which are packed in vacuum. On February 28th, 2008, with the approval of the Trademark Office of the State Administration for Industry and Commerce of the People's Republic of China, the brand of "Trade Source" was registered, and the products were not only in short supply in the domestic market, but also entered the international markets such as Singapore and new york.
