The overall experience of the Apple Penci on iPad Pro is good, with exquisite damping settings and stroke simulation. As for the response speed, thanks to the variable refresh rate setting of the iPad Pro, the recognition speed is about within 10 milliseconds, which is pretty good.
As far as I know, there is no software for converting ink writing into traditional Chinese characters on iOS. Currently known software with such functions is Microsoft Onenote. However, only the Windows desktop version has this function, and it requires a Windows tablet that supports a stylus such as the Microsoft Surface Pro.
