I have lived in Xi 'an for more than 30 years, and I have drunk wine from all over Shaanxi, but I am not familiar with dragon nest wine. Just six or seven years ago, a friend brought a kind of wine, which is said to be the protoplasmic wine of Longwo Winery in Huxian County. We drank a little at that time, and we were not impressed. Recently, a drinker asked me how dragon nest wine in Shaanxi was. I just started to take this problem seriously. I didn't know the history of Longwo Winery before, but I always thought it was a winery built after the development of rural tourism. Another drinker said that Guanzhong folks have a saying about Shaanxi wine, that is, "East Dragon and West Phoenix". I haven't heard this before, and I think it's very interesting, so I specially arranged time to visit Longwo Winery.

First, I contacted by telephone and found that there are actually two Longwo wineries, one with a wine museum and the other with the name of the old Longwo winery. Both wineries are located in Huyi District, Xi City. Huyi District is the original Huxian County. 20 16 the State Council approved the withdrawal of counties and the establishment of districts. Huxian county was originally named Huxian county, and its origin is related to Hu's family. The historical accumulation of Shaanxi is too deep, and every place is endless. Let's stop for a while and go straight to Longwo Winery.

Longwo Winery is located in Longwo Village, Laodian Town, Huyi District. According to the navigation, we found it successfully. Before approaching the winery, the rural scenery came to my face. This is the spring season, with high fields, warm sunshine, vast wheat fields and vines. Since the COVID-19 epidemic, we have been kept indoors and have not gone out for an outing. Suddenly, when we saw such beautiful scenery on the earth, we couldn't help crying. These ordinary things are not easy to see now.

Longwo Winery is built near the country road. There is a big parking lot in front, with some simple stone farm tools such as millstones. Next to the gate of the winery is the sales department of dragon nest wine. Because the winery was still under strict control during the epidemic, the wine culture museum did not open normally, but it happened that Mr. Zhang Yongli, the marketing director in charge of sales, was in the salesroom. I heard that we were the staff of the magazine and made a special trip to visit the Lailongwo winery, making an exception and allowing us to enter the factory, and personally accompanied us to visit the brewing workshop and the wine culture center.

Luckily, the wine-making workshop is distilling wine, and we are in front of the steamer. Everyone has tasted freshly steamed wine at 65 to 70 degrees? The height of the original wine between degrees.

The pits in Longwo Winery are relatively small. According to Mr. Zhang, a pit contains more than 800 kilograms of grain, and a steamer steams 200 kilograms at a time. More than a catty of grain, the winery has been producing normally during the production time.

According to the brochure of Longwo Winery, dragon nest wine began in the Guangxu period of the Qing Dynasty, and its brewing skills are summarized as nine styles in the inheritance of ancient laws, namely: "People get their sincerity, water gets their sweetness, they are happy at the right time, they eat their food, their utensils are clean, their work is fine, their brewing skills are accurate, their fire is slow, and their wine is true". Longwo distiller's yeast is a medium-temperature yeast, with high-quality wheat, barley and peas in Guanzhong area as raw materials, high-quality corn and rice bran as auxiliary materials, and as the main food for brewing. The technological process includes moistening wheat, cooking, adding pulp, spreading and drying, adding koji, entering cellar, fermentation and distillation.

There are many kinds of finished products of Longchao wine. We bought five or six kinds. In fact, you don't drink bottled wine in wineries, either just steamed wine or wine hidden in jars. Dragon nest wine retail department sells two kinds of loose wine. One is vintage wine, ranging from 65,438+05,65,438+00, 8 years and 5 years. 15 years a catty of 220 yuan wine, 120 yuan, 8 years a catty of 80 yuan. The other is new wine, a catty of which is more expensive in 50 yuan and the cheapest in 5 yuan. The local villagers came to buy wine in an endless stream, and most of them bought new wine, one or two barrels, and one barrel of wine was packed in five pounds.

In addition to drinking the original wine just steamed before the steamer, I also drank 15, 10 and 8-year-old loose wine from the retail department. In my experience, the wine I drink in the winery is better than the finished wine sold in the mall. Take Longwo Liquor as an example, its aroma is different from any liquor on the market. We can't describe this fragrance, but it is still slightly fragrant on the whole.

In terms of taste, especially vintage wine, whether it is 15, 10 or 8 years, it is very good, sweet, refreshing and mellow. After drinking this wine, if you compare it with the finished wine on the market, you will find that many finished wines are difficult to swallow.

If we have to compare the prices, I personally think that these puree wines we drink are not worse than those of Guojiao 1573.

There is a distance between the finished wine and the original wine in dragon nest wine. We bought both the original wine and the finished wine, and then we will find an opportunity to compare the wines one by one and introduce them to the drinkers. We did drink a lot today. We tasted a little of each wine, and the quantity was not small. We were all drunk, but in less than two hours, we were all drunk and comfortable. On the way back to Xi 'an, we made a special trip to Qin Zhen, a famous cold noodle producing area in Huyi District, and ate the local specialty Qin Zhen rice skin. This is a happy and fulfilling day! Yellow rice wine is also sold here in Qin Zhen. I will find time to introduce Qin Zhen's cold rice noodles and yellow rice wine in the future.
