What is acidic food? Alkaline food?
Everyone may have made a mistake in distinguishing between acidic and alkaline foods, thinking that tasting with the tongue and judging whether it is sour or astringent with the sense of taste; Or take litmus test paper, according to the physical and chemical characteristics, see its color change or blue to alkaline, red to acidic; Or according to the experience of daily diet, such as lemon, vinegar and orange are acidic, but some books say that lemon, orange and apple are alkaline foods. There are different opinions or contradictions about this. In fact, the acidity and alkalinity of food depends on the type and content ratio of minerals contained in food.
Human food is basically divided into five categories-protein, fat, carbohydrate (commonly known as sugar), vitamins and minerals. Everyone knows that protein and vitamins are very important. Although minerals are only trace, they are also indispensable elements to maintain health, so they are equivalent to protein. For human beings, there are eight essential minerals closely related to the acidity and alkalinity of food: potassium, sodium, calcium, magnesium, iron, phosphorus, chlorine and sulfur. The first five are alkaline (alkaline elements) after reaching the human body. Judging whether a food is acidic or alkaline depends entirely on the content ratio of acidic elements and alkaline elements. In the laboratory, chemists burn food into ashes (100g food is heated in a crucible), then take it out and dissolve it in water, and titrate its pH value. Most animal foods are acidic foods. Such as fish, meat and shellfish, are rich in protein, and protein is high in phosphorus and sulfur.
Most cereals and some nuts are acidic foods, which are the source of human energy.
Alkaline foods include most vegetables, fruits and seaweed. In other words, low-calorie plant foods are almost all alkaline foods.
Why do vinegar and sour fruit juice taste sour on the tongue and the test paper is acidic? Why can't the body be acidic? Edible vinegar and sour fruit, which contain organic acids such as acetic acid, malic acid and citric acid, are absorbed in the body, then the pancreatic juice, bile and intestinal juice are neutralized by sodium carbonate, and then absorbed into the liver, and soon burned into CO2, which has little effect on the human body. Therefore, although the taste is sour, it is not included in acidic food.
Or some organic acids decompose, leaving many minerals such as potassium, sodium, calcium and magnesium. So they show alkaline reactions, such as lemon, orange, vinegar and so on.
Organic acids in vegetables and fruits not only make people feel acidic, but also have an alkaline taste. The so-called alkaline taste is sticky and astringent. The reason is that due to alkalinity, the mucous membrane of the tongue, protein, suffered a little injury and lost feeling for a while.
This is what most people call eating too many fruits and vegetables, and your mouth is astringent, so you can't help but feel cold. So they often misunderstand that eating too much fruit will make your body too cold, but it is not.
Some foods are added with sodium carbonate (soda) or alkaline powder (Taiwan Province "base" powder) in order to prevent corrosion, keep fresh or increase lubricity, which often makes people feel bitter or astringent, because alkaline substances remain in the food.
PH and pH are different. In terms of taste, the acidity in food is better than alkalinity, which is good for people. But what about the taste of acidic and alkaline food? We can't generalize. Some people like the delicious taste of acidic food, but alkaline food such as tofu also has its unique light taste. So delicious food is not necessarily acidic. For example, glutamic acid and lecithin extracted from soybeans are all delicious alkaline foods.

Besides knowing what acidity is. Besides alkalinity, we should also recognize its acidity (or strength). For example, the alkalinity of milk is 0.2 (note: milk and egg white are commonly used in emergency medicine to neutralize acid and alkali), tofu is 0. 1, and pods are 1. 1. Choice of acid-base food

Alkaline foods that should be added to the diet:
